I think posting recipes has become my favorite thing to do!

I was reading a friends blog and saw that she was hoping for an good chicken recipe and immediately I thought, " I HAVE IT "! This actually didn't come from me it came from my husband, which is a huge shock. He likes to come up with creations when I don't feel like cooking. Most of the time none of us will eat them for fear of being poisoned. This is the very first and only one that has turned out and is AMAZING!

Defrost your chicken
lightly coat chicken in skillet with olive oil and add in a jar of PINEAPPLE PEACH SALSA(this is the special ingredient). The one we like the best is sold at Target. Cook at a very low temperature. Constantly flipping over the chicken. The salsa cooks into the chicken and it is so tender, moist, and tasty. This is a definet go on a day when you need something quick and easy. I am sure this could be done in a crock pot as well.

Another YUMMY recipe!

It was a great surprise to receive this as a meal last week! This is similar to a calzone. I can't quite tell you what the difference is. The pizza sauce and the bread was amazing! Happy EATING!

STROMBOLIS

Ham (deli ham cut into bite size pieces)
Sausage (cooked like ground beef)
Pepperoni
Pizza Sauce (see recipe)
Parmesan Cheese
Provolone
Mozzarella
Green Peppers, chopped
Onions, diced
Black olives, sliced
Pizza Dough (see recipe)

*Layer at least two of the meats, two of the cheeses, sauce and two of the vegetables inside dough. Fold dough over and pinch together. Cover top of dough with egg white and sprinkle with Italian seasoning. Bake 500 for about 8 minutes on preheated stone.

Pizza Sauce
16 oz. tomato sauce
1/8 C. olive oil
1 tsp. basil
1 tsp. oregano
1 ½ Tbsp. sugar

Pizza Dough
2 C warm water
3 Tbsp honey
3 C flour
1 Tbsp dough enhancer
2 Tbsp yeast

Mix in bosch or mixer. Will be runny, but let it sit 15-30 min. Pulse to release air and add:

2 C flour
2 tsp salt
4 Tbsp olive oil

Continue to mix/knead adding more flour if needed to get right consistency. Let rise another 15-30 min. Makes 2 strombolis.

DINNER GROUPS ROCK!!!!!

I just joined a dinner group and I love it. There are four families involved in the group. So we each have our night to cook dinner for all four families (including ours), I have Monday's which works perfect for me. Last week was my first week and it was so exciting to have dinner a surprise, Tues-Thursday. My kids were so excited TOO! The dinners were really really yummy! I have decided to start posting some of the recipes. Before the group I would get into such a rut, always making the same things. So if this is you, know that you have somewhere to go to look for something different.

Tonight's Dinner: Tortilla Soup/Taco Soup
This is such an easy(simple) recipe that I came up with on the fly. Mix in the amount of ingredients to your liking as you are making it.
Items needed:
2-4 cups chicken broth
1 lrg. Can refried beans
2 small cans black beans
2 small cans pinto beans
1 lrg. can of corn
2-4 cans of stewed cut up tomatoes Or Rotel and then omit green chilies(already in)
1-2 cans green chilies
1-2 small cans tomatoe paste
Then I add whatever meat I have. I have added grilled Chicken chopped up or ground hamburger or ground turkey meat, anyone of them turns out good.
Then you scoup into a bowl, salt, add some chesse and break up some tortilla chips and throw on top. Stir and it's ready to eat.
This is great for those days when you need something really fast!

I love quotes, this one hit home when I heard it!

I was watching E.R. last night(of all places) and I heard a very good quote/thought and just wanted to share it.

This little boy went up to his mom and asked her if she thought that he could lift up this huge rock. She told him YES, she thought that if he used all his STRENGTH that he would be able to lift the rock. He went over and tried and tried his hardest but couldn't. Then he went and told his mom that he couldn't do it. She went over and helped him, and together they lifted the rock. Then she told him that sometimes using all your strength means asking for help.

When I heard this it hit home, because over the last two years we have had times where we have had to ask for help. It hasn't been the easiest thing to do, but I am grateful to have been blessed by others and look forward to the wonderful opportunity of giving back some day.

THIRTY! Just another number.

I have been a little nervous for the past few years to hit the BIG 30. I have been warning my husband that it better be huge. Ironically we happen to be the pooriest we have ever been so something huge was a little out of the question. My family did a good job of making it special.

I woke up to streamers throughout the living room, a large happy b-day sign with nice drawings on it, balloons all over the floor and a really cute sign made for me!



Then I was escorted outside to my beautiful 12-passenger van that had writing all over it. I had people staring at me all DAY! As if a 12-passenger with only 4 children in it doesn't bring enough attention already. It was so fun.



When I got inside my van I was heart ATTACKED!!!! Hearts were cut out and taped all over my dashboard and windows. My daughter Halli had wrote them and they were so sincere.

.......We love you mommy
.......You are the best!!! You rock are WORLD:I guess at 30 I've still got it!
My husband added .... Roses are red, violets are blue, you're absolutely amazing and we all love you! It was really nice to read these cute little notes all day and to feel so loved.

My husband gave me this card for my birthday....Happiness is like peeing in your pants. Everyone can see it, but only you can feel its warmth. I definitely felt the warmth that day!

Then I really got the surprise of the night. I had taken a nice, quite bath and afterwards went and laid on my bed and feel asleep. I woke up to my husband shaking me and having some of our neighborhood friends singing happy birthday to me. What a sight I must have been. We had icecream and birthday cake. It was so nice of everyone to come over. It was a good 30th after all.
